Revisions to Demo_02_Uncertainty_Analysis tutorial

Updates to PecanProject#3570 documentation/tutorials/Demo_02_Uncertainty_Analysis/uncertainty.qmd for clarity, reducing redundancy and increasing consistency with Demo 1, and alignment with the structure and tone of Demo_1_Basic_Run/run_pecan.qmd.

Key Changes

• rewrite introduction for clarity and conciseness; removed redundant explanations of PEcAn and general workflow concepts already covered in Demo 1; consolidate and simplify prerequisites and setup sections. Add cross-references to Demo 1 instead of duplicating detailed instructions.
• Add notes on normal quantiles and output directory structure.
• Revise explanations of SA, VD
• Move PEcAn package version and session info to the end.
