Deploy GammaScope on AMH/Nginx

Summary

• Adds the AMH/Debian/Docker Compose deployment assets for gamma.hiqjj.org, including server bootstrap and local Moomoo collector scripts.
• Makes live dashboard, heatmap, replay, experimental pages, and WebSocket viewing public while keeping collector/admin mutations token-protected.
• Consolidates the production deployment runbook and points the quick-start path at main for use after merge.

• Generated env files and real credentials are ignored and not included in this PR.
• The current deployment branch remains available until this PR is merged.
