Python 3.15

Attempting to test zarr-python against python 3.15 breaks because of cast-value-rs.

Recommended approaches:

bump pyo3
use one of pyo3's abi3-py* features to target a stable subset of the python ABI which should be robust to new python versions

lets try and bump pyo3

i'm happy to do it unless you already started

I haven't started, got my own list of packages to update first ;)
