- so that the app can switch between material 2 and 3, depending on the user preferences
- update to latest sdk, to be future proof
- add riverpod hooks, since this app should get a bigger rework some time soon, to migreate away from legacy riverpod and the stateful widgets
- use latest versions for the github actions

* add aab build to the matrix, for app store release when requried
* because otherwise it had .. which is incorrect
