Fix deprecated structure

General

Just changed the yaml file structure since it was deprecated for humble version.

New Examples

• The correct folder structure (described in the main README.md)
• Detailed commands how to run an example
• Passed colcon test and pre-commit run

if it is wanted I can edit others as well before the merge.
