Summary

• Enable remark-gfm in @storybook/addon-docs so GFM pipe tables render as real tables
• Fixes the Packages section on the Introduction docs page (and Named schemes in Theming)

Test plan

• yarn docs:build succeeds
• Introduction → Packages renders as an HTML table (not | Package | Description | text)
• After merge, confirm https://reactive.github.io/silk/?path=/docs/introduction--docs
