Update repository references and release infrastructure

Description

This PR updates repository references from informalsystems/quint to quint-co/quint and improves the release infrastructure:

Changes

1. Binary Manager (binaryManager.ts)

   • Updated GitHub API repository reference to quint-co/quint
   • Refactored fetchRelease() to fetch releases by tag directly instead of listing all releases
   • This avoids pagination issues that would eventually exclude older evaluator releases
   • Improved error handling with more descriptive error messages

2. Release Workflow (.github/workflows/release-quint.yml)

   • Updated Node.js version from 18 to 24 to support npm >= 11.5.1 required for trusted publishing
   • Added id-token: write permission for OIDC-based npm trusted publishing and provenance
   • Updated softprops/action-gh-release from v1 to v2

3. Upload Binaries Script (.github/upload-binaries.sh)

   • Updated repository references in usage examples from informalsystems/quint to quint-co/quint

Motivation

• Aligns with the repository migration to the new quint-co organization
• Improves reliability of release fetching by using direct tag lookups instead of paginated listing
• Enhances security with OIDC-based npm publishing and provenance tracking
• Updates tooling to current versions with better support for modern npm features

Testing

• CI checks will validate the workflow syntax and script correctness
• The direct tag lookup approach is more reliable and will be tested during the next release
