Update Python requirements for projects

Would this be appropriate to raise the lower bound of Python examples to the latest released (semi-automatically) or do we prefer to manage it in a different way?

I was curious to try this in response to GHA failure. The context:

So there was a requirements conflict in some Kubernetes example. I will try to run GHA on this branch to see if this helps it.

Hrm... fixed some issues with this, put Packet issues in #1031 - but the remainder is still failing
