docs: update repository references to privateerproj/pvtr - #312

## What/Why The repository moved from privateerproj/privateer to privateerproj/pvtr. Point the install script, docs, security insights, and issue template at the new name so nothing relies on GitHub's rename redirect. ## Proof it works test/install_test.sh passes with the new release URLs, and make test passes. markdownlint-cli2 and shellcheck report no issues. ## Risk Low. Only URLs and docs change. The Go module path is still github.com/privateerproj/privateer, which is intentional. ## AI role Claude Opus 5.5 made the edits and ran the checks. A human reviewed the diff. ## Review focus install.sh now downloads from privateerproj/pvtr releases. Confirm that matches where releases publish. Signed-off-by: jmeridth <jmeridth@gmail.com>
