In addition to renaming the project in the docs, I've also renamed the internal package from manugen-ai to manufold.

I tidied up a few other things, too:

• modules that instantiate a logger now read the LOG_LEVEL env var, defaulting to INFO if not present
• the default loglevel for both dev and prod is WARNING, eliminating the logging of sometimes extremely long LLM queries (e.g., in the case where it's adding image data to the context)
• the test that involves ollama waits until the service is available, avoiding some spurious failures
• gitignored and removed a few files
