feat: allow overriding ID type for generated types

This PR introduces a new config.typescript.defaultIDType property that allows overriding the ID type (string or number) defined by the database adapter.

In our monorepo, this helps address a recurring issue: previously, the generated types would switch between string and number depending on whether tests were run with Postgres or MongoDB. By explicitly setting defaultIDType, we can enforce consistency (e.g., always generating string IDs), reducing unnecessary diffs in payload-types.ts and avoiding noisy commits.
