chore: remove unused/redundant functions from field_display_filtering_utils

Description

These functions that I am removing are unused and also redundant since we have these custom commands: https://github.com/opensearch-project/OpenSearch-Dashboards/blob/main/cypress/utils/apps/query_enhancements/commands.js#L142-L187
