docs: Update screenshots and docs for new themes and bug fixes (#1611)

Fixes #1600 (typo in Custom Statuses screenshot image)

Updates all images that showed incorrect next status for CANCELLED - see #1605

Also reduced the number of images that need to be updated when new themes are added.
