Until now, we were creating notes using only one file per day.
This PR is the first step toward using a folder for each day, which can potentially contain multiple files.
In addition to using folders, we want to replace annotations with a journal that records all events. This journal is a JSON file located in the .nost folder.
In this first phase, we create the folder for the day and add a default file.
Once this file is created, an event is added to the journal in the .nost folder.
