docs: document --model flag in README

Summary

• cli.py already implements a --model override flag (defaults to AI_MODEL from the repo .env), but it was missing from the README's Flags table.
• Added the --model row.

Test plan

• pytest -q / ruff check . / ruff format --check . (unaffected, docs-only change)
