[feat]: Add to Scoop

Problem / motivation

As this project is a simple standalone binary, it would be great to have it available to install via https://scoop.sh/
The scoop manifest is probably very similar to the one from k9s: https://github.com/ScoopInstaller/Main/blob/master/bucket/k9s.json

Proposed solution

Add the scoop manifest into the main bucket of the official scoop repository.

The main issue probably is the persistent folders.
According to https://github.com/janosmiko/lfk/blob/main/docs/config-reference.md#files
They are hardcoded to $XDG. But for scoop, they should be configurable so that they are in the persist folder of scoop itself (see again the k9s example).
So lfk probably needs to be extended with environment variables for:

• LKF_CONFIG_DIR
• LKF_STATE_DIR
• LKF_LOGS_DIR

which are preferred if they are set before falling back to the existing values.
And in scoop, they can then be set to:

"LKF_CONFIG_DIR": "$persist_dir/config",
"LKF_STATE_DIR": "$persist_dir/state"
"LKF_LOGS_DIR": "$persist_dir/logs"

which makes sure that the files are truly portable and do not get deleted on an update.
