[fix] Change metrics port in kafka ingester config to avoid conflict with collector

Which problem is this PR solving?

• Towards fix(deps): update all otel collector packages #6670

Description of the changes

• The OTEL collector upgrade was failing because of a conflict in ports between the kafka collector and ingester which were both binding to :8888. This PR changes the port that the ingester listens on
