This PR extends the EDOT data streams compared to classic APM documentation to cover other ECS-based data streams, such as those used by Elastic integrations (for example, metrics or logs integrations using the Elastic Agent).

During review of the original PR, @felixbarny suggested expanding the scope to also document how EDOT compares with ECS-based data streams beyond APM.

Follows up on #380
