chore: validate mocked response against OpenAPI Specification

• Transform the virtual module so that we do not "bundle" the Spec but "load it" at runtime.
• Add ajv for JSON Schema Validation and use it against our mocked response: this validates the shape of our response against the API, ensuring we do not stray
• Clean-up mocked response to "follow" the schema.
