fix: update secrets management guide with 8.9 changes

Description

As part of camunda/camunda-platform-helm#4048 and camunda/camunda-platform-helm#4240

Adjust the documentation to reflect the next secrets refactor.

Should be merged after: camunda/camunda-platform-helm#4599

When should this change go live?
