This adds support for building the libgit (and associated dependancies) for VisionOS.
Needs a slight patch to one of the CMake files (documented in readme), as there is a known issue where CMake builds xros binaries when targetting the the vrsimulator (https://gitlab.kitware.com/cmake/cmake/-/issues/25188)
