calf: don't build gtk2 gui
b96d148 
calf is used to provide audio effects when part of other programs, but
also has its own gtk2-based gui. as we reduce the usage of the
long-deprecated gtk2, we drop the gui part of calf as well.

Without this, starting the application using `open Halloy.app` will fail
with:

MacOS seems to expect a binary here rather than a shell script, as this
fix makes it work.

abseil-cpp: allow overriding cxxStandard

individual abseil-cpp_* versions allow overriding the C++ standard
version that abseil is built with. this is very useful when the default
compiler C++ standard is different than the project's C++ standard.
accordingly, we extend this capability to the top-level abseil-cpp
wrapper alias as there's no reason to pin to an abseil LTS just for
this.
