Update watcher usage for ESM-only chokidar 5
Bumping chokidar to 5.0.0 makes the package ESM-only and requires Node ≥20.19, but our watcher still loads it via require in server/src/services/watcher.js under an engines declaration of Node ≥18. Running yarn dev/node server/src/index.js on the currently advertised Node 18 (or any CJS entrypoint) will throw ERR_REQUIRE_ESM as soon as the watcher is created, preventing the backend from starting. Please either keep chokidar v3 or convert the watcher/runtime to an ESM-compatible Node version.
