This PR adds Voi Wallet, an AVM mobile wallet with WalletConnect v2 compatibility, as a wallet provider with accompanying updates to documentation and examples. The PR follows the pattern used by Biatec Wallet to extend the WalletConnect class. After reading through the dialogue under the Biatec PR, from what I understand this ultimately ended up being the preferred method, however please let me know if anything has since changed.
