feature(pool): add SEP-41 mint/burn/transfer events alongside existing lp_deposited/lp_withdrawn

Summary

SEP-41 convention emits mint/burn/transfer events distinct from this repo's existing lp_deposited/lp_withdrawn events (contracts/pool/src/events.rs), which describe the USDC-amount side of the transaction rather than the token-supply side. Both are useful for different consumers (an indexer tracking USDC flow vs. a wallet tracking token balance).

Acceptance Criteria

• mint(env, to, amount) and burn(env, from, amount) event functions added to contracts/pool/src/events.rs, following SEP-41's conventional topic/data shape
• Called from the internal mint()/burn() helpers (from the companion refactor issues) alongside the existing lp_deposited/lp_withdrawn events, not replacing them
• transfer event added and called from the new transfer()/transfer_from() functions
• Test added/updated and passing (cargo test), asserting both the old and new events are present after a deposit
