An environment file which installs all the prerequisites for eqt.

Tested by myself and @DanicaSTFC

Instructions to create the environment:

mamba env create -f eqt_env.yml

Should we add these in the documentation or instructions?

Perhaps we want to write instructions on how to create an environment with this file somewhere.
