use chainlist instead of ethereum-list for discovering ethereum networks
consolidate networks-ethereum.yaml and ethereum-known-networks-overrides.yaml
cleaned up dead rpcs in our main networks definitions files
keeps only the 5 best rpcs when building (eth mainnet had 40+)
