Sync deployed SO4 manifests into indexer config

Summary

closes #181

• add an indexer manifest sync script for deployed SO4 contract outputs
• generate indexer-local contract config with network, endpoint, core contract, token, faucet, and market triplet data
• update SubQuery project config to read generated contract manifests instead of using starter hardcoded filters

Verification

• bun run --cwd apps/s03-indexer sync:contracts:testnet
• bun run --cwd apps/s03-indexer build
