test: add point-source simulator coverage

Summary

• add a compact simulator.py integration example for the new point-source profile
• verify over-sampled PSF convolution conserves total point-source flux
• verify ag.lp_linear.PointSource converts to ag.lp.PointSource with the solved coefficient
