fancyholograms: Add support for pre-1.19.4 clients

📋 Description

ViaBackwards cannot correctly translate multi-line text displays for clients older than 1.19.4 (see ViaVersion/ViaBackwards#1029). This adds a workarround that spawns multiple single-line text displays for legacy clients instead, which ViaBackwards can translate correctly.

🔍 Changes

When ViaVersion is detected and a player connects with a pre-1.19.4 client, text holograms are rendered as separate single-line displays.

🧪 How to Test

1. Create a test server with FancyHolograms, ViaVersion and ViaBackwards.
2. Create a multi-line hologram on the server.
3. Test with clients older and newer than 1.19.4.

Possible to make it also works when VV is only installed on the Proxy? Currently, it would not apply the workaround i guess
