ci(langchain): fix tests for test version bump to 1.0

What does this PR do?

LangChain moved their in-memory vectorstore to @langchain/classic from langchain. This PR takes that into account.

This was verified by checking out the dependabot branch, and making sure that these same changes passed. I then just moved the changes over to this branch instead so we can merge this separately. The code path added should be hit in the dependabot PR.

Additionally, there is a flaky test with the v1.0 version, I believe having to do with the testagent vcr not handling parallel openai calls properly. I will have to tackle this separately, and have also noted this in a separate PR: #6709

Motivation

Unblock dependabot test versions update PRs (example).
