Rationale for this change
We need to set up CI for MacOS and address any build problems.
What changes are included in this PR?
Sets up CI for MacOS.
Ensures we are using iODBC headers instead of unixODBC headers for Mac.
Are these changes tested?
Yes.
Are there any user-facing changes?
No.
