Clearly, the UI Kit is in beta and is actually not ready for production use at all. Neither, it can be used and extended, if any organization want to have a starting boilerplate and get to speed as soon as possible. Hence this seems to be a huge obstacle in the sales of Video-SDK.
As per my understanding, making this project open-source will give direct benefits to the zoom consumers and to Zoom itself as the sales of Video SDK will have a huge impact.

Making it open source would really be a benefit to the repo and to the Zoom users. The evolution of the repo itself would probably make it's way much faster thanks to contribution.
Also, as @codestellar said, having the source code as a boilerplate would decrease work for alot of devs, me included. I find myself now having to rewrite all that is already made in the UItoolkit since there is no source code do adapt to my usecase
