Document the CoSERV endpoint

Add suitable documentation related to the coserv service.

At least:
* An architectural diagram similar to https://github.com/veraison/docs/tree/main/architecture/verifier
* A pointer to the CoSERV spec under https://github.com/veraison/docs/tree/main/api

Also, make sure that the information pops up in the veraison book.
