Confirm setup script runs on M1/M2 based hardware

I initially ran into some issues setting up a new M2 based laptop. We should confirm if the setup script works as it should on these devices. It also might have just been my own error.

We could also consider switching to some well tested (maybe?) homebrew install scripts like this one that covers both xcode cli tools and homebrew: https://github.com/kandji-inc/support/blob/main/Scripts/InstallHomebrew.zsh
