Currently there's no option in Pop!_Shop to install the software from specific channel like edge, stable, beta etc.
I have seen such options in Gnome Software Center. but missing in Pop!_Shop

Can you point to Flatpak/Flathub documentation regarding the channels you're referring to? As far as I'm aware, Flathub offers a separate beta repository, but there's no concept of separate channels within a single repository. Channels are a feature in Snaps/the Snapcraft repository.

@jacobgkau i am sorry, i'm not currently using Pop OS because I want to test the Ubuntu 24.04 but the Pop OS 24.04 was not released yet. still i provide you the screenshots of Gnone Software to demonstrate what i mean.

Here are the screenshot from the Gnome Software which shows the Package from Flathub and Snapcraft with their channels like edge, stable, beta etc. I had mentioned about this feature that such feature was not provided by the Pop!_Shop to select from which channel to install the package. i hope it should be clear now. Sorry I am able to provide any Screenshot for Pop!_Shop for comparison as a mentioned earlier I had not installed Pop!_Shop.
