Cool work here! Found this from JiaweiZhuang/xESMF#50 and saw that you all are using VTK's python bindings for re-gridding and saving VTK files for visualization in what seems to be ParaView (guessing from figures in README).
I thought I'd ping you here if development is continuing and see if vtki could help provide a clean interface for VTK IO, mesh filtering, and viz - let me know if you're interested and perhaps I could help you all use vtki to make some sweet examples of your mimetic interpolation technique
