fix(build): include LICENSE in maturin sdist

PyPI rejected the sdist for 8.2.0rc1 with:
    400 License-File LICENSE does not exist in distribution file
    pinecone-8.2.0rc1.tar.gz at pinecone-8.2.0rc1/LICENSE

Cause: maturin 1.7.8 auto-generates `License-File: LICENSE` in PKG-INFO
from the SPDX license expression but doesn't actually include the
LICENSE file in the sdist tarball. PEP 639's `[project] license-files`
isn't recognised by maturin <1.8 (parser rejects the array form), so
use the maturin-native `[tool.maturin] include` directive instead.

Verified locally: `maturin sdist` now bundles pinecone-X.Y.Z/LICENSE.

Side effect of run 25297301425: pinecone==8.2.0rc1 wheels are already
on PyPI (they uploaded successfully before the sdist failed). That
version number is burned — yank it, then retry with prereleaseSuffix=rc2.
The release-rc preflight's PyPI-existence check would block any rc1
retry anyway.
