Feature request: Set log retention

Description of the new feature / enhancement

Feature suggestion

As a user, I want to control the time logs are retained. The current retention is 7 days (see issue #3434).

Why it matters

Even though many enterprise solutions are available that can ingest log files and retain entries for longer than 7 days, here are several important reasons why it can be beneficial to retain it for longer:

1. Data is spread in a large enterprise with multiple systems to manage. Having log files from various sources helps correlate events across these systems, enabling forensics and investigations easier
2. Troubleshooting
3. Risk mitigation help spot suspicious activities that might take time to manifest
4. Better control
