The minio operator image name changed from minio/k8s-operator to minio/operator. Changing that and using latest should be easy, just needs testing afterwards

Updating the minio dependency is not as straightforward as you may think. We only have it there for development, so I would recommend installing the newest Minio operator alongside the Mattermost operator and point the manifest to the bucket manually instead of relying in the minio operator bundled here.
