Bao Buns

Ingredients

For 2 people. Buns:

  • 300 gr white flour
  • 1 pinch salt
  • 1/4 tsp sodium bicarbonate
  • 1.5 tbsp sugar
  • 13 gr (4 tsp) instant yeast
  • 3.5 tbsp sunflower oil
  • 1.5 dl lukewarm water

Filling:

  • 1 avocado
  • 1 spring onion
  • coriander
  • 400 gr beef rumpsteak
  • 1 red chilli
  • 1 cm ginger
  • 1 tbsp sunflower oil
  • 2 pinches sugar
  • 3 tbsp soy sauce
  • 2 pinches salt

Instructions

Buns.

  1. In a bowl, mix the flour, the salt, the sodium bicarbonate, the sugar, the yeast, the oil and the water.
  2. Knead for approx. 10 mins. to form a soft, smooth dough, cover and leave to rise for approx. 2 hrs. at room temperature until doubled in size.
  3. Divide the dough into 6 portions and shape into balls, place each one on a piece of baking paper.
  4. Flatten by hand to approx. 5 mm thick, brush with oil.
  5. Steam for approximately 10-15 minutes

Filling.

  1. Prepare the avocado, the spring onions and the coriander on the side.
  2. Cut the meat into thin strips, remove the seeds for the chilli and chop finely. Finely grate the ginger.
  3. Heat the oil in a non-stick frying pan. Brown the meat for approx. 1 min., add the ginger, add the chilli, sugar and soy sauce, heat gently and season with salt.
