Add different themes to the app

Description

Some users mentioned that a light theme would be preferable in some scenarios. We should investigate the possibility of adding a non-dark theme to the app.

Really like lemonade, but it really urgently needs a light theme at least as working with dark mode is giving me eye strain / headache and long term will mean I can't keep using it. So please consider this

I really want this too, I can help implement them soon (probably by the end of this week). If noone else wants to implement it I can assign it to me.

No... so I have assigned it to @sofiageo as long as the offer still stands.

If not I will do it (I would also prefer a light theme!) but might take me a while to get to it.

PS something a project I really want to do is create a DESIGN.md that would unify the design system across the app, website, and docs, including light and dark themes. If only there were more hours in the day...

I've made some progress but it needs a bit more time before you can review it. I tried to follow the website styling where possible. I'm uploading the progress here in case anyone wants to add any comments.

More updates for this issue, I've fixed some issues with the light theme in #1673 and extracted more colors to CSS variables. This was the most work necessary to be able to override the theme colors. If and when it is merged I will focus in creating a light theme similar to the ones that vscode has (github light or ayu). My goal is to have at least two light themes to choose from.

@PCAssistSoftware @hidp123 The light theme has been included as a preview in the last two versions of lemonade, did you have a chance to test it and evaluate it? some feedback would be nice before we finalize the primary light theme. Then we can discuss if more themes are needed.
