Update documentation for access log changes

What is changing? (Please include as many details as possible.)

In kserve/kserve#2782 we are adding more options to the KServe Custom predictor logic to have better access logs. We should document the new options in the related section.

How will this impact our users?

The new options are opt-in, but the current hardcoded access log configuration doesn't work so upgrading to the next release will allow them to get the right access logs.
