400g spaghetti
+
150g pancetta, diced
+
2 large eggs
+
100g pecorino cheese, grated
+
100g parmesan cheese, grated
+
2 cloves garlic, crushed
+
2 tablespoons olive oil
+
Freshly ground black pepper
+
Salt, to taste

Instructions

Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions.

While the pasta is cooking, heat olive oil in a large skillet over medium heat. Add pancetta and garlic, cooking until the pancetta is crispy. Remove garlic.

In a bowl, beat the eggs and mix in the pecorino and parmesan cheeses. Add a generous amount of black pepper.

Once the pasta is done, reserve a cup of pasta water and drain the rest. Quickly toss the hot spaghetti with the pancetta in the skillet.

Remove the skillet from the heat and immediately stir in the egg and cheese mixture, using a little of the reserved pasta water to create a creamy sauce.

Serve immediately with extra parmesan and more pepper on top.
