Test all exported configs by running a basic lint

We should be running a basic lint script on all the configs we export. This would ensure that at least on a basic level nothing is broken. Would help us avoid bugs like: https://github.com/iTwin/eslint-plugin/issues/95 & https://github.com/iTwin/eslint-plugin/pull/97
