New ecosystem targets

The plan is to add more ecosystems over time, so I'm starting a list! The list can grow quite large so we should prioritize by interest and/or community contributions.

Here's the ones I personally use regularly:

Looks like a pretty comprehensive list to start with.

Maybe add Raspberry Pi 2040 (RP2040) MCU as I know a lot of people like that recently?

I have an example project I'm working on for 8-bit PIC micros. It should be pretty easy to use it as a starting point for anything Microchip puts out for MPLabX. https://github.com/Stone-Path-Engineering/demo-pic18 and would like to contribute it to the cause!

My project is a bit different format than the ones here, but I'm happy to split up the Dockerfile and example parts into two to make it consistent with what's here.
