I'm using the data volume as a read-only volume so I don't mind to blow it away and restore from the S3 bucket on a period. e.g. every 5 mins if there are changes.

It looks like the script uses an undocumented BACKUP_INTERVAL environment variable, defaulting to 42 seconds (reference). I believe that should be able to give the functionality you are looking for.

Your comment is asking about "restore"(S3 --> local volume), not "backup"(local volume --> S3).
Can you add a flag for period restore?
