Tuscan Soup

Ingredients

  • 1 lb ground Italian sausage
  • 1 1/2 tsp crushed red pepper flakes
  • 1 large onion, diced
  • 4 tbsp bacon pieces
  • 2 tsp garlic, minced
  • 10 cups water
  • 5 cubes chicken bouillon
  • 1 cup heavy cream
  • 1 lb Russett potatoes, sliced
  • 1/4 bunch of kale

Instructions

  1. In large pot, Saute suasage with pepper flakes in some olive oil. Cook until brown. Drain and set aside.
  2. Saute bacon, onions, and garlic until onions are soft and begin to brown.
  3. Mix water with boullion. Add to pot with bacon, onions, and garlic. Bring to boil.
  4. Add potatoes. Cook until soft.
  5. Add heavy cream.
  6. Stir in sausage.
  7. Add kale just before serving.
