- 4.5 cups 1-minute oats
- 2 tbsp cornstarch
- 1.5 tsp cinnamon
- 1 tsp baking powder
- 0.5 tsp salt
- 1 cup unsalted butter, room temperature
- 0.75 cup granulated sugar
- 0.5 cup packed brown sugar
- 2 eggs
- 2 tsp pure vanilla extract
- 0.75 cup chocolate chips
- Grind 1.5 cups of oats in a blender. Combine with cornstarch, cinnamon, baking powder, and salt.
- Beat butter, sugar, and brown sugar in mixer until smooth.
- Beat in egg, vanilla, and remaining oats.
- Drop cookies onto parchment lined baking sheet.
- Bake 14 ish minutes at 350 degrees Fahrenheit.
