Gluten Free Oatmeal Cookies

Ingredients

  • 4.5 cups 1-minute oats
  • 2 tbsp cornstarch
  • 1.5 tsp cinnamon
  • 1 tsp baking powder
  • 0.5 tsp salt
  • 1 cup unsalted butter, room temperature
  • 0.75 cup granulated sugar
  • 0.5 cup packed brown sugar
  • 2 eggs
  • 2 tsp pure vanilla extract
  • 0.75 cup chocolate chips

Instructions

  1. Grind 1.5 cups of oats in a blender. Combine with cornstarch, cinnamon, baking powder, and salt.
  2. Beat butter, sugar, and brown sugar in mixer until smooth.
  3. Beat in egg, vanilla, and remaining oats.
  4. Drop cookies onto parchment lined baking sheet.
  5. Bake 14 ish minutes at 350 degrees Fahrenheit.
