Python 3.14 Support

The current pyproject.toml does not allow installation on Python 3.14, meaning the PyPI installation method does not work under Python 3.14. Are there plans to update this to allow installation on Python 3.14?

Hi @selimnairb, thanks for raising this! Yes, we should probably have dropped Python 3.11 support at the end of last year.. Things are a bit busy right now, but we can plan a migration to Python [3.12, 3.14] around mid-July, need to check that all of our dependencies support it!
In the meantime, would your environment work with Python 3.13?

Python 3.13 can work, but in certain settings (e.g., homebrew) with certain other dependencies (e.g., GDAL) you can no longer use 3.13. The workaround for now is to use conda, which is fine for now, but not always ideal.

I've been using uv to work on #1703 and tried echopype under Python 3.14 by removing the <3.14 from pyproject.toml, updating the venv with uv python pin 31.4 and then running the tests locally. All tests that didn't pull data from S3 completed as expected.

ok i've build on #1705 to test for python 3.14 in #1708, CI is running, lets see!
